Bikini

Makes enough for 10 people

Ingredients for the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (makes 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Instructions

To prepare the Syrup: Place all the ingredients inside a saucepan, bring to a gentle boil, stirring until the sugar dissolves. Then, take off the burner and leave to reach room temperature fully. Decant to a clean bottle, close it keeping it in the refrigerator, it will last for about one month.

For the Batch Mix: Pour the specified liquid ingredients in a big jug, allow it to infuse for one hour, then filter it best through muslin, making it completely strained.

When ready to serve: Measure 85ml of the batch mix into your mixing glass packed with ice, and agitate gently for about 60 seconds to cool it down. Strain into a chilled martini glass or a similar vessel, garnish with a few cranberries and finish with a quick spritz with the mandarin essence over the drink.
